Chewy Chocolate Chip Cookies use coconut oil as the fat and as a result, they do have a mild coconut flavor. I don’t like to use a ton of coconut oil as I don’t want all of my food to taste like coconut, but I do enjoy this recipe. The combination of the chocolate and the coconut really works. For these cookies to turn out well, you really have to chill the dough for a few hours. We have tried to skip that step when we’ve been feeling impatient, and the cookies ran all over the place and didn’t have the chewy heft that they’re supposed to have. Don’t skip that step. Your extra time and patience will be rewarded.
